WHAT IS KOMBUCHA ?
Kombucha is fermented tea thought to have originated two thousand years ago. When properly brewed it is a delicious, slightly fizzy and refreshing soft drink that is low in sugar and naturally contains probiotics and healthy organic acids.
Kombucha is made of four simple ingredients: tea, water, sugar and a SCOBY (Symbiotic Culture Of Bacteria and Yeast). During fermentation, the yeasts consume the sugar and produce alcohol, then the bacteria consume this alcohol to produce the acids that give kombucha its sour flavour and contribute to its health benefits.
WHY CHOOSE MOMO KOMBUCHA ?
Our mission is to produce the tastiest and highest quality kombucha. To achieve this we use only the finest organic ingredients and brew the old-fashioned way. This means our kombucha is fermented 100% in glass to prevent plastic or metal leaching, in super-small 8L batches to ensure the best taste and is always naturally carbonated.
It can take up to 30 days to produce one bottle of MOMO Kombucha. We never hasten this natural process and are proud to brew the old-fashioned way.
WHAT ARE THE BENEFITS OF DRINKING KOMBUCHA ?
Kombucha is packed full of naturally occurring probiotics which aid digestion and help maintain balance in the body’s internal ecosystem. It also contains healthy organic acids, antioxidants and vitamins which increase energy, support joint health, reduce blood sugar levels and act as a natural detoxifier.
HOW MUCH SHOULD I DRINK ?
We recommend starting with around half a bottle per day. Everyone’s gut is different and introducing more good bacteria and healthy organic acids should be done gradually. Once you’ve become accustomed to kombucha, drink whatever amount feels right (and try to drink it daily).
DOES KOMBUCHA CONTAIN ALCOHOL ?
Yes, but only trace amounts – usually around 0.5% abv. As it is such a small amount it is categorised as non-alcoholic.
WHAT ARE THOSE BITS FLOATING IN MY KOMBUCHA ?
Our kombucha is a raw, living product and it is completely normal for it to contain bits of beneficial yeast and bacteria. These are safe to drink and the sign of a healthy, unfiltered brew.
WHY MUST KOMBUCHA BE KEPT COLD ?
Kombucha contains living probiotics and will start fermenting again if kept out of the refrigerator. Never shake the bottle, gently invert to mix and open with care.
WHY ARE SOME BOTTLES FIZZIER THAN OTHERS ?
MOMO Kombucha is brewed the old-fashioned way and is always naturally carbonated. This means that the fizz is created through an in bottle second fermentation which grinds to a halt when the bottles are put in the fridge.
All kombucha has a delicate balance of bacteria and yeast which will vary slightly from batch to batch, and because of this variation some bottles will be fizzier than others. We will never force carbonate like traditional soft drinks as it can diminish the integrity of the probiotics and changes the taste of the brew.
